The relationship with the sea
Bicol is surrounded by water. The sea is not separate from the farm — it is another paddock. Local fishermen bring their catch to the landing. We provide ice, cold storage, and a buyer. They get a fair price and a reliable outlet. The community gets fresh fish every morning.
What comes in
Tanigue, galunggong, lapu-lapu, bangus, pusit, hipon — whatever the sea provides that day. Seasonal. Honest. No imported frozen product while local boats are landing fresh catch.
Cold chain — kept on ice, chilled or frozen
Fish iced immediately on landing. Into cold storage within the hour. Temperature logged. Moved to the market display counter cold. Sold cold. Everything stays on ice, chilled, or frozen — from the moment it leaves the boat to the moment it reaches your hands.
The landing
A clean wooden dock. Woven baskets on ice. A catch record book. Practiced speed and care. First light, boats in, fish out, iced, counted, recorded, stored. The whole operation runs in under an hour.
Connecting to the café
The best of the morning catch goes directly to Alijandro's Kambingan. The rest goes to the market counter. Nothing sits more than a day. Freshness is not a selling point — it is the standard.
